The Reason Why I Love My Mother

Here’s the recipe to my mother’s carrot cake. Make it, It’s delicious.

Carrot Cake
1 1/2 cups  corn or vegetable oil
2 cups sugar
4 egg yolks
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
4 beaten egg whites
3 cups grated carrots
1/2 cup nuts

Cream oil and sugar in a large mixing bowl. Add a yolk at a time, beating well.
Stir in sifted dry ingredients.
Fold in beaten egg whites (use electric beater and let them get fluffy ).
Add carrots and nuts
Pour into greased and floured 10” or 9”x 13″ pan.
Bake for 1 hour at 300 F
Top with butter icing

Butter Icing
1/4 cup butter or margarine
2 cups powdered sugar
3 teaspoons milk
1 teaspoon vanilla
pinch of salt

Mix all ingredients well. If too dry add a few drops of milk. Spread on cool cake.
